- Cocemos la jibia, esta vez la he comprado congelada en anillos, lo que simplifica la receta porque nos libramos de tener que limpiala. Cocerá en agua sin sal, hasta que quede tierna.
- También vamos a cocer un huevo.
- Cuando la jibia esté cocida la trituramos, e igual hacemos con el huevo. También vamos a triturar el ajo, el perejil y media cebolla.
- Ponemos todo lo triturado en un bol, le ponemos una pizca de sal, la punta de una cucharilla de azafrán y el huevo batido, añadimos pan rallado en cantidad suficiente para darle consistencia al preparado, pero no ponemos mucho queremos que quede jugoso aunque cueste un poco manejarlo. Hacemos pequeñas bolas que pasaremos por harina.
- Ponemos una sartén con aceite y freímos las albóndigas, las dejamos que escuran sobre papel de cocina.
- Mientras tanto hacemos la salsa: pelamos y picamos muy finita la cebolla, la colocamos en una cacerola con aceite y sal y dejamos que poche a fuego lento y tapado. Cuando la cebolla haya quedado muy melosa, añadimos la harina, el vino, esperamos un poco, agregamos el caldo y dejamos que cocine unos 5 minutos. Incorporamos las albóndigas y dejamos que cocine unos 6 minutos más a fuego muy lento.
