  2. En la misma cazuela hacer el sofrito compuesto por cebolla (1/2 para dos personas), un par de tomates rallados y un cuarto de pimiento verde.
  3. En una sartén aparte con otro poco de aceite, freír unas almendras (un puñado) y el par de ajos. Sacarlos, ponerlos en un mortero y hacer una majada añadiendo un poco de sal.
  4. Lo juntamos todo en la cazuela (las albóndigas, el sofrito y la majada), entonces incorporamos un chorrito de coñac, una hojita de laurel, un sobrecito de azafrán y cubrimos de agua. Dejar hacer a fuego medio unos minutos (siempre comprobar que no se quede seco de agua y comprobar el punto de sal, para que esté sabroso). En los últimos minutos incorporamos unos guisantes (pequeños, que se hacen antes). Esperar el tiempo que los guisantes estén tiernos y retirar.
  5. Estas albóndigas en salsa siempre las acompaño con unas patatas fritas o con un puré de patata. BON APPETIT!!!
