  1. Poner a remojar el pan desde temprano, cuando vayan a cocinar, lo exprimen con cuidado y lo reservan.
  2. La carne molida, si la tienen congelada, la bajan a la refrigeradora desde la noche anterior, cuando vayan a cocinar la enjuagan, escurren y la ponen en un tazón, añaden el pan remojado, salpimentan y echan también el comino y orégano.
  3. Con las manos limpias y secas comienzan a mezclar la carne con los condimentos, la van chancando suave hasta que se incorporen bien los ingredientes y quede todo compacto.
  4. A seguir añaden un poco de la cebolla picada (reservar una parte para el aderezo), el huevo, el perejil picado y volver a mezclar con un tenedor, vuelven a compactar con la mano, reservan.
  5. En un plato colocan la harina y la reservan.
  6. En una olla ponen aceite a calentar, echan la cebolla reservada, ajo molido, van friendo y luego añaden el tomate picado y el ají panca, mueven bien (si quieren le agregan más orégano).
  7. Cuando el aderezo esté bien frito añaden agua hirviendo, la hoja de laurel y le bajan el fuego a la olla.
  8. Nuevamente con las manos lavadas y bien limpias pasan las palmas por la harina, luego toman un poco de carne, las hacen bolitas y las meten a la olla, así hasta acabar con toda la masa.
  9. Si ven que después de haber metido todas las albóndigas a la olla le falta agua, le añaden más y que esté hirviendo.
  10. Cuando comience a hervir, agrega las papas, arverjitas y la zanahoria, dejan que se cocine, verifican que todo esté bien cocinado y listo, apagan el fuego y servir calientito.
